How does a sous-vide machine work?
SIRMAN’s sous-vide machines are designed to produce extremely precise cooking results , thanks to sophisticated electronics that maintain a constant and controlled temperature , with minimal variations. This cooking method requires food to be packaged in special bags from which the air has been removed.
Thanks to vacuum sealing , which prevents bacterial growth, this technique allows cooking at low temperatures without compromising the quality and safety of the food. On the contrary, sous vide offers many advantages, both in terms of quality and in the management of cooking processes.
The advantages of sous-vide cooking
The advantages of sous-vide cooking primarily concern the quality of the food . The combination of vacuum sealing, low temperatures and prolonged cooking times prevents the loss of liquids and aromas , reduces oxidation and preserves nutritional properties. As a result, sous-vide cooked dishes, especially certain cuts of meat and some types of vegetables, are distinguished by:
- a particularly soft and juicy texture
- an intense flavour
- bright colours
In addition, this technique is advantageous from an economic and organisational point of view, as it allows the optimisation of working times , while reducing waste and avoiding the weight loss that food undergoes in traditional cooking processes.
Different types of sous-vide cookers
There are two types of sous-vide cookers: immersion circulators , or sous vide sticks, and static heating tanks .
Immersion circulators are designed for the most demanding chefs and allow for extreme precision in cooking, thanks to a water circulation mechanism that ensures a perfectly uniform temperature throughout the entire tank.
Static tanks are more affordable models which, despite not having a circulator, offer high reliability in the cooking temperatures achieved.

Wi-FoodSoftcookers have particularly efficient heating elements , which in stick models allow the heating of up to 21 gallons of water , even in improvised containers. They can be controlled remotely via an app, with built-in alarm systems that signal cooking problems in real time.
