The Mirra electric slicer is a basic and compact gravity slicer that’s extremely lightweight and manoeuvrable, and can be conveniently positioned on a 70 cm surface. Thanks to its compact size, it’s the ideal professional electric slicer for snack bars, bistros, and small restaurants. The Mirra model is also quite popular in northern Europe thanks to its ability to slice the typical cold meats and sausages of those regions, which have small circumferences.
Like most of Sirman’s professional slicers, the Mirra electric slicer is made from cast aluminium, which is anodised at the final stage. The uniqueness of Sirman’s machines, however, is owed to the casting phase, which takes place within a shell mould, and is performed by gravity rather than by pressure, as is most often the case. Although this process requires a large amount of molten metal with respect to that which makes up the finished machine, it nevertheless ensures the safety and durability of the final product. Sirman has opted for this process because it allows for the use of high-quality metal alloys that can be anodised: an electrolytic process that increases the machine’s resistance to corrosion and makes it suitable for use with food products. This process also guarantees excellent uniformity and surface hardness.

Interchangeable blades
In order to meet the needs of food service operators, Sirman has developed a sophisticated system that allows different blade sizes to be mounted on a single base. Most machines that offer this possibility do not take into account the structural imbalances that the operation is likely to generate, resulting in machines that can be used with different blades but with reduced cutting efficiency. Thanks to in-depth study of the proportions between the blade and the machine’s body.
Sirman is now able to take advantage of the carriage’s ability to guarantee the same cutting capacity as a smaller blade, even on extremely compact machines like the Mirra model. Therefore, thanks to gradually developed modifications, Sirman is able to provide compact professional electric slicers with interchangeable blades and a wide cutting range, without significantly compromising on cutting capacity.

On board sharpener
For the Mirra electric slicer, Sirman opted to install the sharpener on board the machine for several reasons. Firstly, having the tool in sight will encourage the operator to sharpen the blade periodically, and eliminates the need to assemble and disassemble it repeatedly, which is often inconvenient and harmful to the machine. Also, since Sirman electric slicers are produced by casting, they are not perfectly identical to one another, and therefore require specific, non-interchangeable sharpeners that are adjusted and fitted on board each individual slicer. In order to make this accessory even safer and easier to use, it comes equipped with an upper and lower cover, which protects the sharpener against contact with any external agents.
