Professional electric slicer


At first glance, the Palladio electric slicer stands out for its rounded shape. Like most of Sirman’s professional slicers, the Palladio is made from cast anodised aluminium. The production process takes place within a shell mould, and is performed by gravity rather than by pressure, as is most often the case. The operation requires a large amount of molten metal with respect to that which makes up the finished machine. However, this process allows for the use of high-quality metal alloys that have undergone anodising: an electrolytic process that increases the machine’s resistance to corrosion and makes it suitable for use with food products. The result is a clean, durable, uniform aluminium metal with excellent properties in terms of hardness and surface strength. Between the casting phase, where the part comes out rough, and the anodising phase, where the part must be inserted smooth, the part undergoes a polishing phase.
A rounded casting mould is used for the production of the Palladio electric slicer. The process of obtaining a polished surface is much more demanding than a smooth surface, but Sirman didn’t want to cut any corners in terms of processing times and costs, as a polished surface provides for greater ease of cleaning by the end customer. In fact, cleaning and drying a rounded surface is much easier than cleaning the edges and protrusions present on squared surfaces. That’s why Sirman has developed models with rounded shapes for all of its high-end machines, regardless of their size.

Interchangeable blades
Sirman is able to mount various blades on a single base. For example, the body of the Palladio professional electric slicer can be fitted with blade sizes 300, 330, or 350. The larger the blade in relation to the body proportions, the more the slicing capacity tends to decrease: this happens because the height increases, but not the length, creating a disproportion. In order to avoid this problem, Sirman has taken advantage of the carriage’s ability to guarantee the same cutting capacity as a smaller blade, even on compact machines. This feature comes from variations and modifications made over the years, thanks to research and experience in the field. Sirman is therefore able to provide compact professional electric slicers with interchangeable blades and a wide cutting range.

Sharpener
The Palladio electric slicer has a sharpener mounted directly on the machine for several reasons:
  • since it remains visible at all times, the tool encourages blade sharpening on a more consistent basis.
  • 2.it prevents the deterioration of the sharpener itself, as there is not need to assemble or disassemble it, thus making it more easily manageable and less likely to be positioned incorrectly, which could also result in deterioration to the slicer.


  • The Stonehenge line
    For products other than meats and sausages, as well as for cheeses, which tend to stick and slide with difficulty, especially at certain temperatures, Sirman has developed special ceramic blades and slicers. The ceramic coating facilitates the cleaning of the machine, and the detachable parts are even dishwasher safe. In order to facilitate product flow, the Stonehenge line of Palladio electric slicers are treated with a ceramic surface coating. For slicers intended for products other than meats and sausages, special plates are available, like the slides for slicing fish, or the vegetable plate, which allows for the accumulation of greater quantities of sliced product.
